Whole30 Confessionals - Day 7 - Day of Exploration

A week on the Whole30 and finally feeling better, having more energy so I decided to explore:-)

After teaching Amped at the CAC, I went to Cats Gymnastics and did movements I haven't done since I was 5 years old, like back flips. Check Jen out!!!


After running some errands around 29th Street Mall, I decided to check out Orange Theory. After a little Q&A I decided to take the 12:30 class (FYI: first intro class is FREE). They gave me a rate monitor and told me to jump on a rower. I don't think I ever wore a heat rate monitor so needless to say I needed to remember this moment.


Do I feel really self-consious about posting this video?
Hell Yes.
Why?
Because my crazy 'Little Chatty Doll' in the back of my head is telling me I look fat and to 'suck in my stomach and re-take the video' again. 
Did I?
No, because I need to train myself to shut her up so I can embrace my body for what it is and all the wonderful things it does for me. 

Anyhow, using heart rate monitor was very cool, although I don't think it was too accurate. Below are the results. It states I made it into the red zone 29 times and tracked my MAX heart to 240 BPM. Either way, it made time go by faster and was interesting to watch throughout workout.

The Key is to start drinking water earlier.

7:30am - Coconut Milk Latte with Macca

9:45am - 2 Hard Boiled Eggs

12pm - 3 Pieces Beef Jerky

3pm - 4 Pieces Beef Jerky 

7pm - Dinner: Sauted Calamari with garlic, jalapeƱo, sweet mini bell peppers, olives, shredded broccoli & carrots and fresh basil on top of a bed of baby kale topped with 'My Soon to be Famous Tomato Sauce' (still leftover from Day 4)

Day 19 of the Whole30 - DONE!

Week #1 of my 2nd Ladies CrossFit Program at Boulder CrossFit is DONE and so is day 19 of the Whole30...

The ladies worked hard this week...21-15-9 of so many different movements...Just look how dirty our whiteboard got...




Look at them in action...pull-ups & sumo deadlift high-pull / over the shoulder slam balls & slam-ball step-up...



 Talk about a great start to a Friday!!!

My nighttime appetite has been a little off this week...I think it's because it's getting close to that time month...???

Day 9 of the Whole30 - DONE!

So I went to bed instead of blogging last night. By the time I attempted to pull out my computer to blog, it was late and I was tired. It was a crazy-stressful-long day at work. I got home at 8:30pm and all I really wanted was a shot of tequila, but I didn't go there. Instead I paid some bills, practiced Body Pump #92 for the launch on Saturday and started packing for my trip to DC to meet with Whole Foods (Mid-Atlantic Region). 

I was getting a little anxious, traveling on the Whole30 by myself. I usually make my way down to the hotel lobby at night to have a drink or I'd research the best restaurants in town to eat. I mean what else are you suppose to do when you travel, especially by yourself...??? 

Anyhow, I decided I needed another plan of attack in order to set myself of success, so I wrote down a list of things I needed to do (like blogging, learning BP, site seeing, Whole Foods store visits, and redesigning my blog). I also wrote down a list of food/snacks I needed to take with me so cheating wasn't even an option. Making this list of to-do's helped my mind & body calm down which helped me go to bed.

Yesterday's Stats (1/13/15)

Water Consumption
130 ounces
(BTW, not drinking water before bed helped me sleep better through the night...I highly recommend it)

Daily Meals
5:45am - Morning Wake-Up Call : Coconut Milk Latte w/MTC Oil

8am - Snack : Homemade Bone Broth



9am - Breakfast : Leftover Hash (lamb, veggies, cauliflower 'couscous', cherry tomatoes, mixed greens) I ate about 1/2 of this over the course of the morning...(9am-11am)


2pm - Snack : Homemade Beef Jerky

Dinner - 5pm : Sirloin Steak Salad with a poached egg on top (dressing on the side, which I didn't have)


Dessert - 8:45pm : More Homemade Bone Broth



Although I didn't get much sleep last night, I still woke up with a ton of energy...It must be the Whole30...

Homemade Jerky - Primal Eats

If you have dehydrator and you haven't made homemade jerky, you need to. If you don't have a dehydrator you should consider investing in one. It's a great way to make lots of different kinds of homemade snacks...dried fruits, dried veggies, roll-ups, meats, etc...

Homemade jerky is my favorite primal eats...My husband & I actually started a jerky company right after college because we did so many road trips and ate so much jerky we thought it would save and earn us money if we made our own....It was called Trekkin' Jerky...Although the company doesn't exist anymore, it doesn't stop me from making it...

I pride myself as being a jerky connoisseur and refuse to buy bad stuff, although I will try new brands as long as they use quality ingredients...Many brands on the market are loaded with MSG, artificial flavors, sodium and made with conventional meats...Also, hard to find the right texture, dryness or thickness...For a product that is relatively expensive you'd think there would be better options on the market, so since there aren't I just make my own...

If you are really particular about thickness, you should get a automatic slicer...They are not that expensive, will save you time, produce consistent slices and makes it very easy to slice not just meat but fruits and veggies...

Ingredients
- Top Round Beef, Grassfed & Finished: I usually buy at least 8-10 lbs, but buy as much as you want...remember, you will yield about 60% of the total you start with...
- Seasoning or Marinade: I usually do a dry rub of salt, pepper, cumin, paprika, cayenne, turmeric, coriander...But you can really use whatever you want...If you are using a wet marinade you should let if marinade overnight...

Instructions
1. Trim the fat, if needed. 

2. Then cut the big piece of meat into 4-6 smaller pieces so it's easier to cut on my slicer. 


3. Place meat in freeze, frozen meat is easier to slice. If you don't have a slicer you want to partially freeze mea and cut by hand.

4. Slice or cut the frozen meat.


5. If marinading, marinade sliced meat overnight. If using a dry a rub, place the meat on the dehydrator.


6. Season with a strainer so it is coated evenly.


7. Set the timer and temperature according to your dehydrator. I set mine at 160 for about 3 hours.



8. Enjoy! 
Remember, this is fresh-homemade jerky without any preservatives so if you don't eat it within 10-14 days you might want to vacuum seal it or refrigerate it...
