Whole30 Day 16 - Chicago to NY to Randy Meets Cindy at Reebok CrossFit 5th Ave

Back on the plane today for my last leg of my trip...
At this point, my body has not idea what time what time it is since I've been in all different time zones within the past week and 
I'm off to another time zone today...
Chicago (CST) to NYC (EST)...


I always get really nostalgic coming back home:-)(

It's a good thing I had a few Whole30 approves snacks before I walked the streets of New York...
I checked into my Hotel, NYC Row, booked a massage and headed to Reebok's CrossFit Fifth Ave, about 1 mile from my hotel.

The temptation on the streets of NCY is overwhelming:-(

After the WOD, I headed to my massage and then wondered through the streets of NYC for food.

I must admit I was really craving NY pizza...
Wouldn't you if you saw this beautiful array of pies...???




But, no I didn't cave into temptation. I stayed focused and strong and when there are too many food choices, I stuck with what I know is Whole30 Compliant and to tell you truth I could eat sashimi everyday if I had too.

I went to bed early and was able to sleep-in a little:-)

Daily Meals:
9am - Coconut Milk Latte & Homemade Chicken Salad & Veggies

1:30pm - On the Plane, Salmon Salad (bought at Wolfgang Puck O'Hare Airport), Homemade Chicken Salad and Dressing



4pm - Handful Macadamia Nuts

10pm EST (9pm CST/8pm MST/7pm PST):
Salad, Hamachi Collar & Sashimi
Sounds like a late dinner, but my time zones are all out of whack, my body has NO idea what time it is, I just eat when I'm hungry... 




If you could eat sashimi everyday on the Whole30, would you?

Day 29 on the Whole30 - DONE in Atlanta!

What a flippin' day...
I wake at 5am to teach.
I immediately went home and finished packing for my trip to Atlanta, another Whole Foods trip. 


Starting from top left, I packed mixed nuts (unsalted), homemade beef jerky (dry rub), veggies (carrots, snap peas and cherry tomatoes), figs, homemade ginger-jalapeño pesto sauce (much thicker than last time so I don't get harassed by the TSA), homemade chicken & egg salad (coated in pesto sauce), veggie noodles with seared salmon, blender bottles and supplements.

My third trip on the Whole30, I feel like a pro Whole30'er on the road. I got so my tips and tricks traveling while on the Whole30. 

I get to the airport without any stress, unlike last week. I had over a hour before my flight. Departure was at 11:59 and I was checking in at 10:45am. For some reason the kiosk prompted me to talk to an attendant who informed me that it was too early to check-in. 'But my flight leaves in about hour', I said anxiously. 'Your flight leaves at 11:59pm tonight and arrives at 4:30am tomorrow morning', she said with smirk. 'WHAT! When did Frontier start doing over night flights?' 

I asked if there was any connecting flights I could take to get me to Atlanta today. She politely checked as she shook her head no. It takes days for me to recover from red eye flights, but I was stuck. I had no other choice then return later tonight for my flight. At least I my hotel room is booked for two nights so I had a place to crash for a few hours before my 11:30am meeting tomorrow. 

I left the airport stunned (I can't believe I did that), but also grateful. I had the whole to ahead to be productive and I took full advantage of that! 

I was so exhausted by the end of the day I took a Uber ride to the airport instead of driving. I thought it would be less stressful, but it wound up being more stressful because the driver drove so slow I didn't think I was going to make my flight:-( 

Anyhow, I wound up making it, took 2 Night Rest (herbal pills to promote sleep) upon check-in, fell asleep upon take-off and woke in Atlanta about 2 1/2 hours later.

8pm - Dinner : Seared Bone-In Pork Chop & Homemade Veggie Noodles and Kale


I love my new spiral slicer. I spiral sliced a bunch of veggies on Sunday (prep day) and cook them as needed.

Day 20 of the Whole30 - DONE!

I know I'm way behind on blogging, but it's not because I cheated on the Whole30, it's just because I'm way behind:-(

I'm actually really proud of myself of the discipline I've had on the Whole30. To tell you the truth, by the end of the first week I wasn't even thinking about what I couldn't have on this so-called 'diet'...I was thinking about all the kinds of food I could have...It's a mental thing for me and stems from my eating disorder...I also hate 'diets' because they usually set people up to fail from the start due to the amount restrictions in what they eat. I was always around people dieting growing up and it just seemed absurd. Somehow being on a 'diet' always made you hungry, probably because it was low-fat, high-carb. All my mom's friends would loose 5 lbs and gain 10 lbs...then they'd lose 10 lbs and gain 15 lbs...How is that anyway to live...???

Anyhow, I don't consider the Whole30 a 'diet'. I consider it a sustainable lifestyle. Once I got past the first week I didn't really think about food throughout the day because I ate satiating meals that filled me up for hours and I became fat-adapted instead of sugar-burner. The only time I really think about food is when I'm planning and prepping my food for the week. Other than that, all the food is ready to go. I eat when I'm hungry and I don't worry about how much I'm eating. All I focus when I eat now is slowing down (actually chewing my food), being mindful (making sure I'm not distracted), and appreciating my life (family, friends, work, play, sleep and food). It's really amazing to see how my relationship towards food has changed and all it took was the willpower to eat real food for a few weeks...I'M SO PYCHED!!!

Day 15 of the Whole30 - Halfway There!!!

To tell you the truth I didn't think I would make it to the halfway point. I thought I would've caved-in on my birthday and ordered up a couple coin style margaritas or slightly dirt martinis. Or would've cheated while I was out of town. 

The question is...what's keeping me going...??? 

I mean I didn't think I need to make any drastic changes to my diet, I just wanted to detox after the holidays. I don't eat that bad, but I didn't eat that clean either. I remember saying to many, 'I workout a lot so I can eat whatever I want'. What a crock of shit! Now that I'm eating clean and not drinking I'm beginning to understand the real reasons I decided to do the Whole30 wholeheartedly. But in order to mentally and physically understand the reasons I had to actually experience them which doesn't really occur until halfway time (TODAY, DAY 15). 

Top reasons I'm going to keep in keeping on...
1. I'm sleeping better...I'm talking about quality sleep, not waking up throughout the night...This morning, for example, I woke up at 4:45am and jump out of bed to teach the first day of my 2nd Ladies CrossFit program...
2. My cloths fit better (aka I feel sexier)...I feel the little extra tire around my belly disappearing...
3. My mind works better, I'm more focused and clearer...I heard of brain fog, but I didn't know I had it until I lost it...
4. My energy is through the roof...I'm feeling stronger and fitter than ever...
5. My mood is more positive than it's been in a very long time...I'm smiling from the inside out:-)
6. My skin is brighter...A few people even said I was glowing...
7. I am more mindful and grateful when I eat...


8. Last, but not least...I'm more confident...Bring It On!!!

Day 14 of the Whole30 - DONE!

Sunday is my  FUNDAY in the kitchen...it's when I plan and prepare the majority of my week's meals...Some people go to church, I cook...

Below is a list of the FUN I had in my kitchen on Sunday:
1. Made 2 sauces 
*Sauces are a KEY ingredient to any meal. I like to make at least 2 to get me through the week*

 Wasabi, Ginger, Garlic, Lemon, Avocado Oil Aioli

Coconut Milk, Cilantro, Jalapeño, Vinegar, Avocado Oil, Fig

2. Seasoned & Seared Ahi Tuna (for lunch)


3. Marinaded & Seared Lamb Loins (for Sunday dinner & leftovers anytime)



4. Roasted Sweet Potatoes & Cauliflower (for dinner and enough to have leftovers anytime)


5. Brined a Brisket to Smoke Monday. Eat on Tues and have enough leftovers for the week. 


6. Cut up a bunch of veggies to snack on, using my sauces for dipping. 

7. Made Bone Broth

 8. Made Jerky

No wonder why I had such a good night sleep. Cooking all day and yoga. Sunday = FUNDAY.
